Bringing fresh bread back to instores
GENESIS is the computerized bakery system that brings fresh bread capability back to the instore bakery. It includes fully automated mixing, dividing, intermediate proofing and moulding and produces a complete range of bread and rolls.
Automated operation, with low labor requirement
The Genesis system incorporates fully automated mixing, dividing, intermediate proofing and moulding , with operators only needed to weigh up ingredients.
Touch screen control
With the Genesis' unique computer touch screen control, you are able to produce ten different products from a single batch of dough, all at a different weight and different shape. All this without any monitoring by employees while it works. You simply place the ingredients in the mixer bowl, start the mix process, and enter your required bread and roll products into the computer. The rest is automatic. At the end of the process, an employee can tray up the product - or if no one is available, the system will wait.
Accuracy, quality
the Genesis assures variations of no more than 1 to 2% on each divided product. Finished quality and consistency will not disappoint! Maximum water content possible with the Genesis is 62%.
Labor costs
The Genesis is designed to reduce labor costs by 40% compared to standard bread production. The Genesis even divides dough straight from the mixer, avoiding the need for lifting heavy doughs from the mixer. One person can easily operate the Genesis with a minimum of 260 lbs of flour every hour.
Cleaning
Daily cleaning can be completed in minutes, with an end to end clean once a week of 30 minutes.
